RJ Cooper Previews Rogue 24 in NYC

Last week, we gave you a behind the scenes look at chef RJ Cooper's forthcoming D.C. eatery, Rogue 24. Now, he's previewing the menu for a limited time—in New York City.

Cooper will set up shop April 27 through May 8 at Limited Time Only (LTO), a pop-up space and rotating restaurant in Manhattan developed by Ron Castellano and PPX Hospitality. Rogue 24 will be the concept's first restaurant. Going along for the ride are pastry chef Chris Ford and mixologist Gina Chersevani, both of whom are part of the Rogue 24 team in Washington. Diners will have two options: 16 courses for $100 ($160 with four pairings), or 24 courses for $125 ($180 with eight pairings).

The menus, which had been under wraps until now, have finally been revealed here, but we're just as confused as ever. Dishes with descriptions like "headcheese/pretzel paper/fried grilled mayo," "liquid chicken/truffle/cepe/everona," and "lamb/blue ridge inspirations/peanut" have us scratching our heads. How exactly does one fry and grill mayo? Is liquid chicken anything like chicken broth? What is, pray tell, a Blue Ridge inspiration?
